I've never had to deal with a girlfriend's opinion because I've specifically avoided dating while I finish up uni, but I have dealt with this with a few friends before so I know a little of what you're going through. I usually just bring it up in conversation (it appears casually to them, but I actually work it into the conversation somehow) and talk about how I've fallen in love with swimming for exercise and I've switched to a speedo since it is so much better for the quality of the workout. I've run into a few friends on the pool deck before while wearing a speedo, but no one has ever made a big deal about it; I'm just a guy wearing the proper attire for my workout, like a cyclist wearing Lycra or a runner wearing loose short shorts or a soccer/football player wearing cleats. Now, wearing a speedo casually on vacation, that I couldn't tell you because I've never done it.
But I would say this: she's going to find out about the speedos eventually, so what does it matter if the relationship is new or not? Either way she'd be dating a speedo wearer, so if that's a deal breaker for her, why not get it out of the way sooner rather than later so no time is wasted or hearts are broken?
